Years ago, I was introduced to a unique jelly that has intrigued me since. I have explored the wilds of Florida searching for the fruit of this cactus and would like to share my thoughts with you.
The Prickly Pear Cactus protects itself with little hair-like thorns that are quite difficult to remove, once you have them inbedded in your flesh. The best thing is to avoid getting them in your skin at all. When I go to harvest the fruit, I wear gloves but harvest the fruit utilizing tongs and a sharp knife.
When you get the fruit home, place it in a brown paper bag and then in your freezer. After a couple of days, remove the fruit and wash it in deep, running water, using rubber gloves to move the fruit around. You will need to do this several times in order to remove all the hair-like thorns. Once this has been accomplished, simply following these directions:
